Wheat, oats, rape and peas in a six-year rotation. Most of it used to leave on a grain lorry in September for whatever the market said that morning. Now it goes forty yards to a stone mill and a press instead, and we sell it a sack at a time.

The stones do ninety kilos an hour

That is the entire mill, which is why we grind on two days a week and why we turn down the wholesale enquiries that come in every spring. The same wheat leaves the stones as wholemeal and, sieved twice, as a strong white. A merchant would take the whole shed in one lorry in September and pay us by the end of the month.

Wholemeal has about twelve weeks in it

The germ and its oil stay in the flour, which is the point of stoneground and also why it goes rancid on a shelf. We mill to order and we throw away whatever is still in the barn at twelve weeks, which came to £840 last year. Roller-milled white would keep for two years and taste of nothing.

A wet August decides which price we get

Milling wheat has to hold its Hagberg and its protein. In 2024 eleven days of rain on standing corn dropped Long Twelve to 178 seconds, and forty-two acres we had grown for the mill went off the farm as feed at roughly a third of the money. We do not build that year into the price of a sack; some harvests it simply happens.

Selling direct means holding the whole year

One lorry is one payment. A kilo and a half at a time means grain sat in the shed all winter, insured, turned, and tested twice, with something like £31,000 tied up in it until the following June. The cover crop is the same trade in miniature: a field growing something green that earns nothing until the spring.
